The coffee that starts most mornings around here. Grown by 700 smallholder farmers in the remote Guji zone of southern Ethiopia and sun-dried the old way, this certified-organic natural leads with raspberry and plum, settles into chocolate, and finishes clean. This is what natural-process Ethiopia is supposed to taste like. If you drink one coffee off our list, make it this one.
Garrido Estates sits in Boquete's famous growing corridor — Hacienda Esmeralda and Elida Estate are literally the neighbors — but most of this farmer's coffee never reaches the US. This washed lot is classic Panama: clean, sweet, and smooth, with nutty tones that turn caramel-like at a medium roast and a malty finish that lingers. Low acidity, endlessly drinkable. World-class terroir without the boutique price tag.
Not your average Sumatra. Harimau Tiger keeps the region's signature — thick, dark-toned, wet-hulled — but on a much cleaner profile: straight chocolate and warm spice instead of peat and earth, with soft fruit hints at a medium roast. The darker we take it, the fuller the body gets, picking up smoky, baker's-chocolate depth. If you want a coffee with real weight in the cup, this is the one.
A community lot from six smallholder families in San Ignacio, high in northern Peru's Cajamarca region — grown organically at nearly 6,500 feet alongside bananas, corn, and shade trees. The cup is clean and juicy with a syrupy sweetness: papaya and grapefruit up front at lighter roasts, rounding into chocolate as the roast develops. Fully traceable back to the farms it came from. This is what a high-end Peru tastes like when the coffee never gets rushed.
